Tofu Vegan Egg Scramble

Ingredients:

  • 1 TBSP high heat oil (avocado oil preferred)

  • 1 16-oz block of Organic Firm Tofu

  • 2 TBSP Nutritional Yeast

  • ½ tsp Salt, ¼ tsp Turmeric Powder, ¼ tsp Garlic Powder, ¼ tsp Onion Powder

  • 2 TBSP non-dairy milk (unsweetened, unflavored)

How To:

  1. Place a pan over medium heat. Once hot, place the block of tofu on the pan and mash it with a fork or crumble it with your hands.

  2. Use a spatula to toss frequently for 4 minutes until the moisture is mostly gone.

  3. Add the nutritional yeast, salt, turmeric powder, and garlic powder. Continue to stir for another 5 minutes.

  4. Pour the non-dairy milk onto the pan and stir to mix, then remove from the heat and enjoy as you would scrambled eggs!

  • *See any egg recipes and replace eggs with chickpea flour vegan scramble

  • Avocado toast with tofu scramble and sriracha

  • Tofu scramble with breakfast potatoes, avocado, and steamed kale

  • Tofu scramble with mixed berries and avocado

  • Sweet potato toast with tofu scramble and tempeh bacon
