Chickpea Flour Vegan Egg Scramble

Ingredients:

  • 1 Cup Chickpea Flour

  • 1 Cup Non-Dairy Milk (unsweetened and unflavored)

  • 2 TBSP Nutritional Yeast

  • Spices: ½ tsp Turmeric Powder, ½ tsp Garlic Powder, ¼ tsp Black Pepper, ¼ tsp Onion Powder

  • Veggies: Diced Onion and Kale

How To:

  1. Cut up veggies.

  2. Place a pan over medium heat with 1 TBSP of high heat oil.

  3. Add onion and kale and saute until onions are translucent.

  4. Whisk together the chickpea flour, non-dairy milk, and spices.

  5. Once veggies are cooked, pour the mixture onto the pan and cook into a pancake-like consistency, then begin to break it up and mix it around with a spatula until fully cooked and no more moisture.

  6. Remove from the heat and enjoy as you would scrambled eggs!

Variations:

  • *See any egg recipes and replace eggs with chickpea flour vegan scramble

  • Add to an almond flour wrap and serve with hot sauce

  • Avocado toast with chickpea powder scramble and sriracha

  • Chickpea powder scramble with breakfast potatoes, avocado, and steamed kale

  • Chickpea powder scramble with mixed berries and avocado

  • Sweet potato toast with chickpea powder scramble and tempeh bacon
