Sweet Potato Toast / Potato Toast

Ingredients:
1 Sweet Potato (Jewel, Garnet, Japanese, Purple, etc.) OR Russet Potato
1 Avocado, ¼ Red Onion, 1 Egg, 1 TBSP of Fresh Parsley
Spices: Salt, Pepper, Garlic, Onion
How To:
Preheat the oven to 375 degrees.
Cut the sweet potato into ¼ inch thick slabs.
Place the slabs in a single layer on an un-greased cookie sheet and bake at 375 for 12 minutes, flipping halfway through.
Then, toast 2 pieces in the toaster at medium to high.
Top with avocado, a fried egg, red onion, and parsley.
Save the rest of the slices in the refrigerator to use throughout the next few days.
