Breakfast Wrap

Ingredients:
2 Tortillas or Wraps (Almond Flour Wrap, Chickpea Flour Wrap, Cassava Wrap, etc.)
1 TBSP High Heat Oil (Coconut Oil or Avocado Oil)
1 Egg, 1 Avocado, ¼ Red Onion
Spices: Salt, Pepper, Garlic, Onion
How To:
Place a large pan (un-greased) over low to medium heat.
Once hot, lay a grain free wrap on the pan for up to 10 seconds, then flip for another ~10 seconds. Transfer to plate.
Add high heat oil to the pan (avocado oil or coconut oil) and crack an egg into the pan. Cook as desired.
Slice an avocado and cut up a red onion.
Scoop the avocado onto the wrap, lay the red onion evenly over the avocado, and transfer the cooked eggs on top.
Sprinkle spices as desired.
Roll up the wrap and enjoy!
Variations:
Wrap with avocado, tempeh sauteed in hot sauce, and leafy greens
Wrap with egg, bacon flavored tempeh, and dairy free cheese
Wrap with egg, breakfast sausage, and maple syrup
Wrap with almond butter (or any nut butter) and fruit spread with hemp seeds (or seeds of choice)
Wrap with almond butter (or any nut butter) and berries with hemp seeds (or seeds of choice)
Wrap with almond butter (or any nut butter) and banana slices with chocolate chips and hemp seeds (or seeds of choice)
Notes:
To make it Elimination Diet, Paleo, and Whole 30 friendly, use grain free tortillas, such as almond flour tortillas.
To make it Gluten free, use gluten free tortillas or grain free tortillas, such as almond flour tortillas.
To make it vegan, use Tofu Vegan Egg Scramble or Chickpea Flour Vegan Egg Scramble instead of eggs.
