Strawberry Spinach Salad

Ingredients:

  • 4 Cups Spinach

  • 2 Chicken Breasts

  • 2 Cups Strawberries

  • 1 White Onion

  • 2 TBSP Poppy Seeds

  • Dressing: ½ Cup Olive Oil, 1 Cup Rice Vinegar, 2 tsp Sea Salt, 1 tsp Black Pepper, 2 tsp Garlic Granules

How To:

  1. Preheat the oven to 350 degrees.

  2. Season chicken breast with sea salt, black pepper, and garlic granules.

  3. Roast in the oven at 350 degrees for about 25 minutes or until cooked through.

  4. Cut chicken into bite sized pieces and set aside to cool.

  5. Chop up strawberries and white onion into small pieces.

  6. Add spinach, strawberries, onion, chicken, and poppy seeds to a bowl.

  7. Then, mix together dressing ingredients and pour over the salad. Enjoy!

Notes:

  • Make vegan and vegetarian by swapping chickpeas instead of chicken.
