Arugula Berry Salad

Ingredients:
4 Cups Arugula
½ Cup Blackberries
½ Cup Blueberries
1 Avocado
1 Cucumber
½ Cup Pistachios, No Shell
Dressing:
2 TBSP Olive Oil
2 TBSP Lime Juice
1 TBSP Pure Maple Syrup
1.5 TBSP Fresh Mint Leaves
Sea Salt
Black Pepper
How To:
Slice the cucumber into thin rounds and cut further into bite sizes if desired.
Cut the avocado into small pieces.
Add arugula to a bowl and top with blackberries, blueberries, avocado, cucumber, and pistachios.
To make dressing, blend 2 TBSP of olive oil, 2 TBSP lime juice, 1 TBSP of maple syrup, and 1.5 TBSP fresh mint with a dash of salt and pepper. Enjoy!
