Arugula Berry Salad

Ingredients:

  • 4 Cups Arugula

  • ½ Cup Blackberries

  • ½ Cup Blueberries

  • 1 Avocado

  • 1 Cucumber

  • ½ Cup Pistachios, No Shell

  • Dressing:

    • 2 TBSP Olive Oil

    • 2 TBSP Lime Juice

    • 1 TBSP Pure Maple Syrup

    • 1.5 TBSP Fresh Mint Leaves

    • Sea Salt

    • Black Pepper

How To:

  1. Slice the cucumber into thin rounds and cut further into bite sizes if desired.

  2. Cut the avocado into small pieces.

  3. Add arugula to a bowl and top with blackberries, blueberries, avocado, cucumber, and pistachios.

  4. To make dressing, blend 2 TBSP of olive oil, 2 TBSP lime juice, 1 TBSP of maple syrup, and 1.5 TBSP fresh mint with a dash of salt and pepper. Enjoy!
