Salmon Cilantro Spinach Salad

Ingredients:

  • 4 Cups Spinach

  • ~ 2 TBSP Avocado Oil

  • 1 lb Wild Caught Salmon

  • ½ Red Onion, Finely Chopped

  • 1 Small Jicama, Finely Chopped

  • 1 Avocado

  • ½ Cup Cilantro

  • Dressing: 6 TBSP Lime Juice, 3 tsp Sea Salt, 3 tsp Garlic Granules

How To:

  1. Season the salmon with sea salt and garlic granules.

  2. Heat avocado oil on a pan over low to medium heat and cook salmon on both sides until cooked through (about 10 minutes on each side).

    • Look for the salmon to be light pink and easily flake when you poke it with a fork.

  3. Cut the skin off of the salmon and discard, then cut the salmon into bite sized pieces.

  4. Chop the red onion and jicama into tiny pieces, dice the avocado into small pieces, and chop the fresh cilantro.

  5. Add the spinach, red onion, jicama, avocado, and salmon to a bowl.

  6. Top with cilantro, drizzle with lime juice, and sprinkle sea salt and garlic granules.

  7. Mix together and enjoy!
