Quinoa Tacos

Ingredients:
Tortilla: 8 Almond Flour Soft Tortilla
OR Grain Free Hard Shell Tortilla, Grain Free Soft Shell Tortilla, etc.
1 Cup Quinoa
1 TBSP Avocado Oil
½ Yellow Onion (Chopped)
1 TBSP Garlic (Minced)
Spices:
1 TBSP Chili Powder
1 TBSP Ground Cumin
1 ½ tsp Smoked Paprika
1 ¼ tsp salt
¼ tsp Cayenne Pepper
1 Cup Salsa
2 Cups Vegetable Broth
3 TBSP Lime Juice
Pico De Gallo:
Avocado
Tomato
Onion
Jalapeno
Garlic
Cumin
Cilantro
Lime Juice
Salt and Pepper To Taste
How To:
Toast the uncooked quinoa on an ungreased skillet over medium heat for 5 minutes, stirring occasionally.
Transfer to a fine mesh strainer, rinse, and set aside.
Heat avocado oil over medium-high heat and saute onions for 5 minutes, then add the garlic and all spices for an additional minute.
Add the rinsed quinoa, salsa, and vegetable broth and stir.
Cover with a lid, bring to a boil, then reduce to medium-low and simmer for 20 minutes.
Remove the lid and simmer for an additional 5 minutes until extra liquid evaporates.
Remove from the heat and let it sit for 10 minutes. Stir in 3 TBSP of Lime Juice.
Pico De Gallo Veggie Mix:
Chop up avocado, tomato, onion, jalapeno, and cilantro. Mince the garlic.
Combine all with lime juice, salt, and pepper.
Assemble taco by topping tortilla with quinoa and pico de gallo veggie mix or toppings of choice. Enjoy!
