Pesto Eggs

Ingredients:
2 Eggs
1 TBSP High Heat Oil (Coconut Oil or Avocado Oil)
1-2 TBSP Pesto
Optional: Toast of Choice
How To:
Place a pan over low to medium heat with a high heat oil (avocado oil or coconut oil.)
Add 1 TBSP of pesto to the pan and crack an egg over it.
Allow the egg to fry and transfer to the plate when fully cooked. Add more pesto if desired. Serve over preferred toast or enjoy by itself!
Variations:
Pesto eggs with lightly sauteed tomato and onion
Pesto eggs with avocado
Pesto eggs with bacon flavored tempeh or breakfast meat
Notes:
Make Vegan by swapping eggs with Tofu Vegan Egg Scramble or Chickpea Flour Vegan Egg Scramble.
