Pesto Eggs

How To:

  1. Place a pan over low to medium heat with a high heat oil (avocado oil or coconut oil.)

  2. Add 1 TBSP of pesto to the pan and crack an egg over it.

  3. Allow the egg to fry and transfer to the plate when fully cooked. Add more pesto if desired. Serve over preferred toast or enjoy by itself!

Variations:

  • Pesto eggs with lightly sauteed tomato and onion

  • Pesto eggs with avocado

  • Pesto eggs with bacon flavored tempeh or breakfast meat
