Veggie Egg Frittatas

Ingredients:

  • 2 Eggs

  • Veggies: ½ Onion, ½ Bell Peppers, 2 Handfuls Spinach or Kale

  • Toppings: Hot Sauce Or Avocado

  • 1 TBSP High Heat Oil (Coconut Oil or Avocado Oil)

  • Spices: Salt, pepper, garlic, onion, paprika

How To:

  1. Chop all veggies.

  2. Place a pan over low to medium heat with a high heat oil (avocado oil or coconut oil.)

  3. Crack eggs into a bowl and whisk.

  4. Pour eggs onto the hot pan and add veggies and spices.

  5. Allow to cook until almost set. Remove from heat and cover with a lid until fully set (about 5-10 minutes.)

  6. Top with hot sauce or avocado and enjoy!

Variations:

  • Frittata with nitrate free turkey bacon, sliced tomatoes, chopped spinach, shredded potatoes, with salt, pepper, garlic powder, onion powder, and nutritional yeast

  • Frittata with onion, broccoli, and tomato seasoned with salt, pepper, garlic, and onion

  • Frittata with kale, onion, and peppers seasoned with salt, pepper, and nutritional yeast

  • Frittata with shredded potato and onion, seasoned with salt, pepper, garlic, and paprika

  • Frittata with peppers, onion, mushrooms, and spinach seasoned with salt, pepper, garlic, and onion

  • Frittata with carrots, red onion, and parsley seasoned with salt, pepper, garlic, onion, and cayenne
