Paleo Pancakes

Ingredients:
High Heat Oil (Avocado Oil or coconut oil)
1 Cup Paleo Baking Flour (Bob’s Red Mill)
¾ tsp Baking Soda
¼ tsp Salt
2 Eggs
⅓ Cup Almond Milk
1 TBSP coconut oil (Melted)
1-2 tsp Honey
6 Drops Liquid Monk Fruit Sweetener
1 tsp Vanilla Extract
Toppings: Pure Maple Syrup, Walnuts, Banana Slices
How To:
Mix together all dry ingredients. Add wet ingredients and mix together.
Grease a pan with high heat oil (avocado oil or coconut oil) over low heat
Scoop batter onto pan to form pancakes and allow to cook on each side until golden and cooked through.
Transfer to a plate and spread dairy-free butter onto each pancake.
Add toppings as desired.
Variations:
Chocolate Chip Pancakes: Sprinkle chocolate chips to each pancake immediately after scooping batter onto the pan.
Blueberry Pancakes: Add blueberries to each pancake immediately after scooping batter onto the pan.
Strawberry Pancakes: Add strawberries to each pancake immediately after scooping batter onto the pan.
Banana Pancakes: Add banana slices to each pancake immediately after scooping batter onto the pan.
Top with a mixture of coconut butter (¼ cup) and pure maple syrup (2 TBSP)
Notes:
Make Whole 30 friendly by omitting honey.
