Harvest Salad

Ingredients:
1 Head Kale, Chopped and Massaged
1 Chicken Breast, Roasted
1 Sweet Potato, Cubed and Roasted
1 Cup Brussels Sprouts, Chopped and Roasted
1 Red Apple, Chopped
½ Cup Dry Quinoa
Slivered Almonds, Toasted
Dressing:
1 Part Olive Oil
2 Parts Balsamic Vinegar
1 tsp Salt, 2 tsp Garlic Powder
How To:
Preheat the oven to 375 degrees.
Chop sweet potato, apple, and Brussels sprouts into small pieces.
Slice chicken breast into thin slices.
Set apples aside and spread veggies and chicken onto a baking sheet and coat with avocado oil and salt, pepper, and garlic powder.
Bake at 375 degrees for about 20 minutes, checking halfway through. Remove veggies and continue cooking chicken if needed.
When chicken is cooked through, cut into bite sized pieces.
Cook Quinoa: Add ½ cup of quinoa and 1 cup of water to a pot and bring to a boil. Lower to a simmer and cover for 12 minutes. Then, remove from heat and allow to cool with no cover.
Rinse, chop, and massage the kale by squeezing and releasing it with clean hands. (You can also chop in the food processor!)
Put slivered almonds in a pan with no oil over medium heat and continuously stir them for about 4-5 minutes until toasted.
Assemble the bowl by adding a base of kale, then adding the toppings.
Make the dressing by mixing 1 part olive oil, 2 parts balsamic oil, and salt and garlic powder as desired.
Pour the dressing over the salad and enjoy!
Notes:
For a more simple recipe, you can omit the Brussels sprouts and it will still taste delish!
Make this vegan and vegetarian by swapping the chicken with tempeh, tofu, or chickpeas! You can also simply omit the chicken, as the quinoa is packed with protein.
Make this grain free, paleo, elimination diet, and whole 30 friendly by omitting the quinoa. You can also increase the amount of chicken if desired!
