Simple Kale Salad

Ingredients:
1 Head Kale, Chopped and Massaged
½ Red Onion, Finely Chopped
1 Avocado, Mashed
2 TBSP Lemon Juice
1 TBSP Lime Juice
1 tsp Grated Ginger
1 TBSP Olive Oil
Spices: Sea Salt, Garlic, Onion, Black Pepper
How To:
Rinse, chop, and massage the kale by squeezing and releasing it with clean hands. (You can also chop in the food processor!) Put into a large bowl.
Cut open the avocado and remove the pit. Chop the red onion. Add the avocado and red onion to the bowl of kale.
Squeeze the juice of one lemon and one lime over the salad, and grate the ginger as desired over the salad.
Drizzle the salad with olive oil and sprinkle sea salt.
Massage everything together with your hands.
Notes:
Serve by itself or combine it with the Simple Quinoa Salad! This will keep in the refrigerator for up to 4 days!
