3 Cups Black Beans (or 2 Cans)
1 Yellow Onion
2 Garlic Cloves
1 Cup Salsa
½ tsp Chili Powder
1 ½ tsp Ground Cumin
Cilantro Pesto:
~¾ Bunch Cilantro
1 Small Shallot
3 Garlic Cloves
1 TBSP Red Wine Vinegar
¼ Cup Olive Oil
Toppings:
~¼ Bunch Cilantro
6 Radishes, Sliced
1 Jalapeno Pepper, Diced
1 Cup Shredded Romaine
How To:
Cook The Beans:
Dry Beans: Rinse and soak them in a bowl with water for 6-24 hours. Then, add to a pot and cover with 4 inches of water. Bring to a boil and allow to boil for about 10 minutes. Bring to a simmer and allow to cook, covered for about 1 hour or until beans are cooked through and can be poked with a fork.
Canned Beans: Pour canned beans into a pot and simmer for about 15 minutes.
Drain the beans and season with salt and pepper.
Chop the yellow onion.
In a large pan over medium heat, add the avocado oil and yellow onion. Saute for 5 minutes.
Add 1 minced garlic clove and saute for another minute.
Add the cooked beans, 1 cup of salsa, ½ tsp of chili powder, and 1 ½ tsp of cumin powder. Simmer for 10 minutes, stirring occasionally.
Chop the toppings of choice (¼ bunch cilantro, radishes, jalapeno peppers, and lettuce.)
Make cilantro pesto by blending 1 cup tightly packed cilantro leaves, 1 small shallot, 2 garlic cloves, 1 TBSP red wine vinegar, and ¼ cup olive oil in a food processor or strong blender.
Place each almond flour tortilla on an ungreased, hot pan over medium heat and allow it to heat on each side for 10-15 seconds to soften.
Fill each tortilla with the beans and toppings of choice.
Enjoy!
