Ingredients:

    • OR Grain Free Hard Shell Tortilla, Grain Free Soft Shell Tortilla, etc.

  • 3 Cups Black Beans (or 2 Cans)

  • 1 Yellow Onion

  • 2 Garlic Cloves

  • 1 Cup Salsa

  • ½ tsp Chili Powder

  • 1 ½ tsp Ground Cumin

  • Cilantro Pesto:

  • Toppings:

    • ~¼ Bunch Cilantro

    • 6 Radishes, Sliced

    • 1 Jalapeno Pepper, Diced

    • 1 Cup Shredded Romaine

How To:

  1. Cook The Beans:

    • Dry Beans: Rinse and soak them in a bowl with water for 6-24 hours. Then, add to a pot and cover with 4 inches of water. Bring to a boil and allow to boil for about 10 minutes. Bring to a simmer and allow to cook, covered for about 1 hour or until beans are cooked through and can be poked with a fork.

    • Canned Beans: Pour canned beans into a pot and simmer for about 15 minutes.

  2. Drain the beans and season with salt and pepper.

  3. Chop the yellow onion.

  4. In a large pan over medium heat, add the avocado oil and yellow onion. Saute for 5 minutes.

  5. Add 1 minced garlic clove and saute for another minute.

  6. Add the cooked beans, 1 cup of salsa, ½ tsp of chili powder, and 1 ½ tsp of cumin powder. Simmer for 10 minutes, stirring occasionally.

  7. Chop the toppings of choice (¼ bunch cilantro, radishes, jalapeno peppers, and lettuce.)

  8. Make cilantro pesto by blending 1 cup tightly packed cilantro leaves, 1 small shallot, 2 garlic cloves, 1 TBSP red wine vinegar, and ¼ cup olive oil in a food processor or strong blender.

  9. Place each almond flour tortilla on an ungreased, hot pan over medium heat and allow it to heat on each side for 10-15 seconds to soften.

  10. Fill each tortilla with the beans and toppings of choice.

  11. Enjoy!
