Taco Bowl

Ingredients:
1 Cup Rice (Cauliflower, Brown, or White)
1 lb Ground Beef
4 TBSP Tomato Paste
2 Tomatoes On The Vine
1 Jalapeno Pepper
1 Red Onion
8 Radishes
2 Avocado
½ Bunch of Cilantro
3 Minced Garlic Cloves
Taco Seasoning OR ½ tsp Garlic Powder, ½ tsp Onion Powder, 1 tsp Paprika, 1 tsp Cumin, 1 tsp Chili Powder, ½ tsp Sea Salt
Taco Shells (I Use Siete Grain Free) OR Tortillas (I Use Siete Almond Flour) OR Lettuce Cups OR Tortilla Chips (I Use Siete Grain Free Dip Chips)
How To:
Cook rice: White Rice, Brown Rice, Cauliflower Rice
Meat:
On a large pan, saute ground beef over medium heat until cooked (no red, about 15 minutes).
Drain oil into a safe container (such as an old jar) and return the beef to the pan.
Mix the taco seasoning with 1 cup of warm water and pour it over the beef. Add 4 TBSP tomato paste and minced garlic.
Continue to saute until it thickens (about 5 minutes).
Veggies:
Chop tomatoes, jalapeno pepper, red onion, radishes, avocado, and cilantro.
Create your bowl with your rice, meat, and veggies. Top with fresh chopped cilantro.
Serve with taco shells, tortillas, lettuce cups, or tortilla chips and enjoy!
Notes:
Make grain free, elimination diet, and whole 30 friendly by using cauliflower rice instead of white or brown rice.
Make vegan or vegetarian by swapping beef with seasoned, sauteed, and mashed chickpeas or beans.
