Burrito Bowl

Ingredients:

  • 1 Cup Rice (Cauliflower, Brown, or White)

  • 1 lb Chicken, Beef, or Pork, Seasoned and Sauteed

  • 1 Cup (Or 1 Can) Beans (Black or Pinto)

  • 1 Green Bell Pepper, Chopped

  • 1 Small Jalapeno Pepper, Chopped Very Tiny

  • 1 Red Onion, Chopped

  • 1 Diced Tomato On The Vine or Salsa

  • 1 Avocado, Chopped

  • 1 Cup Romaine, Chopped

  • 2 TBSP Lime Juice

  • ½ Bunch Cilantro, Chopped

  • Spices (Salt, Pepper, Garlic Granules, Adobo, Cumin, Chile Powder, Paprika)

How To:

  1. Cook beans: Black Beans

  2. Cook rice: White Rice, Brown Rice, Cauliflower Rice

  3. Meat:

    • Season the meat of choice with all spices. Saute in a pan over medium-high heat with a bit of avocado oil until cooked through.

  4. Veggies:

    • Chop bell peppers, jalapeno pepper, red onion, tomato, avocado, and romaine.

    • Saute the bell peppers, jalapeno pepper, and onion with avocado oil and all spices over medium-high heat.

  5. Create your bowl with your rice, meat, beans, and veggies. Then, add any desired extra spices and top with 1 TBSP of lime juice and fresh chopped cilantro. Enjoy!

Notes:

  • Make grain free, elimination diet, and whole 30 friendly by using cauliflower rice instead of white or brown rice.

  • Make vegan or vegetarian by swapping meat with seasoned and sauteed chickpeas or omitting and seasoning the beans instead.
