Simple Samoas

Ingredients:
1 Cup Pitted Medjool Dates (Or 10 Dates)
1 Cup Shredded Coconut
⅓ Cup Non Dairy Chocolate Chips
½ tsp Coconut Oil
How To:
Preheat the oven to 400 degrees.
Spread coconut on a baking sheet in an even layer and bake for 3-5 minutes, careful not to burn. It should turn out as a light golden brown. (OR toast on a pan over medium heat)
Add dates and coconut to a food processor or high speed blender and pulse until mixture begins to clump into a ball.
Line a baking sheet with parchment paper.
Create 1 TBSP balls of dough and flatten, then poke a hole through the center of each, laying them on the baking sheet.
Place in the freezer to harden.
Melt the chocolate chips by microwaving for 20-30 second increments until melted.
OR with a DIY double boiler by filling a pot with 2 inches of water and resting a bowl (with a wider width than the pot) over the pot over low heat.
