Paleo Vanilla Cake

Ingredients:
2 Cups Paleo Flour (OR 2 Cups Gluten Free 1:1 Flour)
1 Cup Sugar (OR 1 Cup Granulated Monk Fruit Sweetener)
2 tsp Baking Powder
⅛ tsp Salt
3 Eggs
¾ Cup Avocado Oil
¾ Cup Milk (Almond, Hemp, Oat, etc.) OR Water
2 tsp Vanilla
Icing:
1 Cup Refined Coconut Oil, Softened
1 tsp Vanilla Extract
OR use Miss Jones Vanilla Frosting
How To:
Preheat the oven to 350 degrees.
Combine the dry cake ingredients in a large bowl.
Combine the wet cake ingredients in another bowl.
Pour the wet ingredients into the dry ingredients and mix well.
Spread coconut oil onto a cake pan or add cupcake lining to cupcake pans.
Add the batter to the cake pan or cupcake pans.
Bake for 20-25 minutes for cupcakes and 30-35 minutes for cake.
Make the icing by whipping the softened coconut oil, powdered monk fruit sweetener, and vanilla with a whisk or an electric mixer. Set aside.
Remove and allow to cool, then spread icing on the outside of the cake.
Decorate as you wish. Enjoy!
Notes:
Make this vegan by using flax eggs instead of regular eggs.
