Paleo Vanilla Cake

  1. Preheat the oven to 350 degrees.

  2. Combine the dry cake ingredients in a large bowl.

  3. Combine the wet cake ingredients in another bowl.

  4. Pour the wet ingredients into the dry ingredients and mix well.

  5. Spread coconut oil onto a cake pan or add cupcake lining to cupcake pans.

  6. Add the batter to the cake pan or cupcake pans.

  7. Bake for 20-25 minutes for cupcakes and 30-35 minutes for cake.

  8. Make the icing by whipping the softened coconut oil, powdered monk fruit sweetener, and vanilla with a whisk or an electric mixer. Set aside.

  9. Remove and allow to cool, then spread icing on the outside of the cake.

  10. Decorate as you wish. Enjoy!

Notes:

  • Make this vegan by using flax eggs instead of regular eggs.
