Mediterranean Wrap

Ingredients:
4 Chickpea Flour Tortillas
4 TBSP Garlic Hummus
1 Cup Chickpeas
½ Cup Spinach
1 Avocado
½ Tomato On The Vine, Chopped
½ Cucumber, Chopped
⅓ Red Onion, Chopped
¼ Cup Kalamata Olives
Mediterranean Dressing:
¾ Cup Olive Oil
¼ Cup Lemon Juice
¼ Cup Red Wine Vinegar
3 Garlic Cloves, Minced
2 tsp Dried Oregano
1 tsp Salt
1 tsp Pepper
How To:
Mix up all dressing ingredients in a jar and shake well. Put aside.
Place a pan over medium heat and lay each tortilla on the pan for 10 seconds, then flip for another 10 seconds and remove.
Cut up spinach, avocado, tomato, cucumber, and red onion. Strain the chickpeas and olives.
Spread hummus onto the wrap, add avocado, followed by all veggies, chickpeas, and olives. Drizzle dressing over it and add salt and pepper as desired.
Roll it up and enjoy!
Notes:
Make elimination diet, paleo, and whole 30 friendly by using an almond flour wrap, omitting the hummus, and swapping the chickpeas with chicken.
