Loaded Breakfast Toast

Ingredients:

  • 1-2 Pieces of Toast of choice (Made with Whole Grain Bread, Sprouted Ezekiel Whole Grain Bread, Gluten Free Bread, Grain Free Bread, Sweet Potato Slabs, or Potato Slabs)

  • 1 TBSP High Heat Oil (Coconut Oil or Avocado Oil)

  • Toppings: 1 Avocado, 4 slices Bacon Tempeh OR Breakfast Meat, 1 Fried Egg, ¼ Onion, 1 TBSP Fresh Parsley

  • Spices: Salt, Pepper, Garlic, Onion

  • Sauce: Sriracha

How To:

  1. Toast the bread in the toaster or toaster oven at medium to high until golden.

  2. Slice avocado, scoop onto toast, and mash down with a fork.

  3. Cut up the onion.

  4. On a large pan, heat high heat oil (avocado oil or coconut oil) over low to medium heat and add the onions. Using a spatula, make room for the bacon tempeh and saute both for about 10 minutes, flipping the bacon tempeh half way through.

  5. Place the onion and bacon tempeh over the avocado.

  6. Top with a fried egg, drizzle sriracha overtop, and sprinkle the parsley overtop. Enjoy!

Variations:

Savory:

  • Toast with avocado, red onion, and sriracha

  • Toast with avocado, roasted chickpeas, and everything but the bagel seasoning

  • Toast with dairy free cream cheese, smoked salmon, red onion, and scallions seasoning with salt, pepper, and garlic powder

  • Toast with scrambled eggs, sauteed shredded potato, and ketchup

Sweet:

  • Toast with non-dairy butter, coconut sugar OR monk fruit sweetener, and cinnamon

  • Toast with almond butter (or any nut butter) and berry fruit spread with hemp seeds and chia seeds (or any seeds)

  • Toast with almond butter (or any nut butter), banana slices, and chocolate chips

  • Toast with almond butter (or any nut butter), chocolate chips and shredded coconut

  • Toast with almond butter (or any nut butter), pitted medjool dates, and shredded coconut

  • Toast with hazelnut spread, berries, and shredded coconut

  • Toast with fig spread, onion, garlic, mushrooms, and fresh sauteed herbs (basil, oregano, sage, thyme, rosemary)

  • Toast with dairy free cream cheese and strawberry fruit spread with berries
