Loaded Sweet Potato

Ingredients:
1 Sweet Potato (Any Kind)
Non-Dairy Butter (Or Oil)
Toppings: Almond Butter, Chocolate Chips, Walnuts, Chia Seeds, Hemp Seeds
How To:
Wash a sweet potato and use a fork to poke holes into the outside of it so it has holes all around.
Bake at 400 degrees for about 60 minutes or until you can easily poke through the sweet potato with a fork.
Remove sweet potato from oven, slive in the middle, and scoop out just a little bit. You can put this to the side or eat it.
Spread almond butter on the inside of the sweet potato and sprinkle with chocolate chips, walnuts, chia seeds, and hemp seeds. Enjoy!
Variations:
SWEET TOPPINGS: Sweet Potato with nut butter, fruit spread, nuts and seeds, and fruit (berries, banana slices), honey, cinnamon, shredded coconut
SAVORY TOPPINGS: Sweet Potato with black beans, red onion, tomatoes, peppers, avocado/guac, cilantro, chickpeas, hummus, kale, tofu, scramble, salsa, etc.
