Lemongrass Chicken Rice Bowl

Ingredients:

  • 1 Cup Rice (White, Brown, or Cauliflower)

  • 2 Chicken Breasts (Chopped)

  • 2 TBSP Avocado Oil

  • 1 Large Yellow Onion, Minced

  • 5 Garlic Cloves, Minced

  • 3 TBSP Lemongrass Paste

  • 2 Cans Coconut Milk

  • Spices (~½-1 tsp each): Salt, Pepper, Turmeric, Garlic Powder, Onion Powder

  • 1 Cup Broccoli, Chopped

  • 1 Zucchini, Chopped

  • 8 Radishes, Chopped

How To:

  1. Cook Rice: White Rice, Brown Rice, Cauliflower Rice

  2. Chop the chicken into cubes.

  3. Chop/mince the veggies (onion, garlic, broccoli, zucchini, radishes)

  4. In a large pan over low to medium heat, add avocado oil and onion. Saute for about 8 minutes. Add garlic and saute for an additional 30 seconds.

  5. Then, add lemongrass paste, coconut milk, and the spices. Stir.

  6. Add chicken. And saute for about 10 minutes.

  7. Add veggies and saute for an additional 10 minutes.

  8. When all chicken and veggies are cooked through (chicken should have no more pink when cut in half and veggies should easily poke through with a fork), remove from heat.

  9. Serve over the rice. Enjoy!

Notes:

  • Make this grain free, elimination diet, paleo, and whole 30 friendly by using cauliflower rice.

  • Make this vegan and vegetarian by using chickpeas, beans, or tofu instead of chicken.
