Jackfruit “Pulled Pork”

Ingredients:

  • 2 cans of Young Green Jackfruit

  • 1 TBSP Avocado Oil

  • 1 Sweet Onion, Diced

  • 1 Cup BBQ Sauce (I use Organicville or Primal Kitchen)

  • ½ Cup Water

  • Sriracha Hot Sauce, To Taste

  • Salt

  • Bread or Wrap Of Choice (Whole Grain Pita Is Good!)

How To:

  1. Put canned jackfruit in a strainer and rinse well.

  2. Cut off the hard center core parts and chop the onions.

  3. Heat avocado oil in a large skillet over medium heat, add the onion, and cook for about 5 minutes.

  4. Add the jackfruit, BBQ sauce, and water. Stir and allow to simmer for 20 minutes, stirring occasionally.

  5. Remove from heat and use two forks to mash and shred the jackfruit. Then, cook over high heat for an additional 10 minutes, stirring frequently.

  6. Serve on bread or wrap of choice.
