Grain Free Everything Bagels

Ingredients:
3 Cups Almond Flour
1 Cup Tapioca Flour
2 tsp Baking Powder
1 tsp Sea Salt
⅔ Cup Warm Water
2 TBSP Apple Cider Vinegar
2 TBSP Honey
1 Egg Yolk
Everything But The Bagel Seasoning
Or a mixture of: Poppy Seeds, Sesame Seeds, Onion Granules, Garlic Granules
How To:
Preheat the oven to 350 degrees.
Fill a pot with water and bring to a boil, then reduce heat to keep at a gentle boil.
Combine dry ingredients in a large bowl and add wet ingredients except for egg yolk. Mix to form dough.
Divide into 8 portions.
Form each portion of dough into a ball shape, then flatten to make a bagel-sized circle and create a hole in the middle with your finger.
Grease a baking sheet with avocado oil and place each bagel onto it.
Drop each bagel into the boiling water for 1 minute or until they float, then remove and place them back on the baking sheet.
Bake the boiled bagels for 10 minutes.
While they are cooking, pour Everything But The Bagel seasoning in a small bowl.
Remove the bagels from the oven, brush with beaten egg yolk and top with seasoning.
Put bagels back into the oven for another 15 minutes or until golden brown. Enjoy!
Variations:
Sesame Bagel: Swap Everything But The Bagel seasoning with Sesame Seeds.
Chocolate Chip Bagel: Omit Everything But The Bagel seasoning and include mini chocolate chips and 6 drops of liquid monk fruit sweetener in the dough.
Blueberry Bagel: Omit Everything But The Bagel seasoning and include blueberries and 6 drops of liquid monk fruit sweetener in the dough.
Cinnamon Raisin Bagel: Omit Everything But The Bagel seasoning and include raisins, cinnamon, coconut sugar, and 6 drops of liquid monk fruit sweetener in the dough.
Plain Bagel: Omit Everything But The Bagel seasoning.
