Coconut Curry Bowl

Ingredients:
1 Cup Rice (Brown or White)
1 Jar Curry Sauce
½ Cup Coconut Milk
2 Cups Chicken or Chickpeas
Veggies of Choice:
Onion, Garlic, Bell Peppers, Carrots, Broccoli, Sweet Potato, Kale, Spinach, Tomatoes, etc.
How To:
Cook rice: Add 1 cup of rinsed rice and 2 cups of water to a pot with a dash of salt. Bring to a boil and reduce to a simmer. Cover and don’t touch for 20 minutes. Then, remove from heat, and allow it to cool with no cover.
Chop veggies small and thin.
Add oil to a large pan over medium heat and add the protein of choice.
Once almost cooked through (about 10 minutes), add the vegetables, jar of curry sauce, and coconut milk.
Simmer in the pan with a lid, stirring occasionally until everything is cooked through (about 15-20 minutes).
Then, serve over the rice and enjoy!
Notes:
Make grain free, elimination diet, paleo, and whole 30 friendly by using cauliflower rice instead of rice and chicken instead of chickpeas.
Make vegan and vegetarian by using tofu or tempeh instead of chicken.
