BBQ Pineapple Bowl

Ingredients:
1 lb Chicken OR 1 14 oz Pack of Firm Tofu, OR 1 Pack of Tempeh
1 12 oz Jar BBQ Sauce
2 Cups Pineapple Chunks
2 Green Peppers
2 Onions
1 Cup Rice (OR Cauliflower Rice)
How To:
Cut the pineapple, green pepper, and onion into chunks.
Cut up the chicken, tofu or tempeh into chunks. (If you hate dealing with raw chicken, wait until the end to cut it up!)
Place the chicken, BBQ sauce, pineapple, green pepper, and onion in a crockpot. Cook throughout the day on low.
If using tofu or tempeh, wait to add these at the last hour of cooking.
When the crockpot meal is almost done, cook the rice:
Add 1 cup of rice and 2 cups of water to a pot with a dash of salt. Bring to a boil. Reduce to a simmer. Cover and don’t touch for 20 minutes. Then, remove from heat, and allow it to cool with no cover.
Scoop rice into a bowl and top with the BBQ chicken and veggies.
Notes:
Make grain free, elimination diet, paleo, and whole 30 friendly by using cauliflower rice instead of rice.
Make vegan and vegetarian by using tofu or tempeh instead of chicken.
