Coconut Curry Beef Stew

Ingredients:
1 Can Coconut Milk
2 Cups Beef Broth
2 TBSP Vegan Butter
2 TBSP Olive Oil
2 lbs Beef Chuck (Cut Into Chunks)
2 Onions Chopped
1 Sweet Potato Cubed
3 Carrots Sliced
2 TBSP Curry Powder
1 tsp Ginger Powder
1 tsp Coriander
1 tsp Garlic Powder
Spices: Salt and Pepper
How To:
Chop up all the veggies.
Combine everything in a crockpot and cook on low for 8-10 hours or high for 5-6 hours.
Make sure everything is cooked through and enjoy!
Notes:
Make this vegan or vegetarian by swapping beef broth with vegetable broth and swapping beef with a plant protein like chickpeas, beans, lentils, tempeh, or tofu.
