Coconut Curry Beef Stew

Ingredients:

  • 1 Can Coconut Milk

  • 2 Cups Beef Broth

  • 2 TBSP Vegan Butter

  • 2 TBSP Olive Oil

  • 2 lbs Beef Chuck (Cut Into Chunks)

  • 2 Onions Chopped

  • 1 Sweet Potato Cubed

  • 3 Carrots Sliced

  • 2 TBSP Curry Powder

  • 1 tsp Ginger Powder

  • 1 tsp Coriander

  • 1 tsp Garlic Powder

  • Spices: Salt and Pepper

How To:

  1. Chop up all the veggies.

  2. Combine everything in a crockpot and cook on low for 8-10 hours or high for 5-6 hours.

  3. Make sure everything is cooked through and enjoy!

Notes:

  • Make this vegan or vegetarian by swapping beef broth with vegetable broth and swapping beef with a plant protein like chickpeas, beans, lentils, tempeh, or tofu.
