Coconut Chickpea Stew

Ingredients:
1 Cup Vegetable Broth
1 Cup Full Fat Coconut Milk
2 Onions Chopped
3 Garlic Cloves Minced
2 Cups Chickpeas (Canned OR Cooked)
1 Sweet Potato Cubed
3 Carrots Sliced
1 Cup Broccoli Chopped
Kale
Spices (1-2 tsp each): Garlic Powder, Onion Powder, Basil, Oregano, Thyme, Curry Powder, Cayenne Pepper, Salt and Pepper
Can add ANY other veggies if you want!
How To:
Chop up all the veggies.
Combine everything in a crockpot and cook on low for 8-10 hours or high for 5-6 hours.
Make sure everything is cooked through and enjoy!
Notes:
Make this paleo and whole 30 friendly by swapping chickpeas with some kind of meat like chicken or beef with the option of using animal-based broth.
