Coconut Chickpea Stew

Ingredients:

  • 1 Cup Vegetable Broth

  • 1 Cup Full Fat Coconut Milk

  • 2 Onions Chopped

  • 3 Garlic Cloves Minced

  • 2 Cups Chickpeas (Canned OR Cooked)

  • 1 Sweet Potato Cubed

  • 3 Carrots Sliced

  • 1 Cup Broccoli Chopped

  • Kale

  • Spices (1-2 tsp each): Garlic Powder, Onion Powder, Basil, Oregano, Thyme, Curry Powder, Cayenne Pepper, Salt and Pepper

  • Can add ANY other veggies if you want!

How To:

  1. Chop up all the veggies.

  2. Combine everything in a crockpot and cook on low for 8-10 hours or high for 5-6 hours.

  3. Make sure everything is cooked through and enjoy!

Notes:

  • Make this paleo and whole 30 friendly by swapping chickpeas with some kind of meat like chicken or beef with the option of using animal-based broth.
