Chickpea Cereal Bowl

*Plus 12 hours of soaking time if using dry chickpeas.
Ingredients:
1 Cup Chickpeas
1 TBSP coconut oil
1 TBSP Pure Maple Syrup
⅔ Cup Non-Dairy Milk
½ Cup Mixed Berries
Scoop of Almond Butter
Drizzle Of Honey
How To:
Cook Chickpeas
Dried Chickpeas: Soak 1 cup of chickpeas for 12 hours. Then, strain and rinse. Transfer to a pot and fill a few inches higher than chickpeas with water. Bring to a boil, then bring to a simmer and cover until tender (about 1-1 ½ hours.) Strain.
Canned Chickpeas: Strain and rinse, then transfer to pot and fill a few inches higher than chickpeas with water. Bring to a boil, then bring to a simmer and cover for about 30 minutes. Strain.
Preheat the oven to 350 degrees.
Transfer chickpeas to a pan and toss with melted coconut oil and pure maple syrup.
Bake for 10 minutes. Remove and allow to cool.
Add all ingredients to a bowl and enjoy it like cereal!
Variations:
Roasted Chickpeas Coated in Cacao Powder, Frozen Banana Slices, Almond Butter, Maple Syrup in Almond Milk
Make the milk chocolate by adding 1 TBSP of cacao to the milk and whisking together before adding other ingredients
Add protein by adding 1-2 scoops of vanilla protein powder to the milk and whisking together before adding other ingredients
