Breakfast Hash

Ingredients:

  • 4 Eggs

  • 2 TBSP Avocado Oil

  • 1 Large Potato, Diced

  • 1 Onion, Diced

  • 1 Red Pepper, Diced

  • 4 Garlic Cloves, Minced

  • 8 Pieces Of Bacon

  • 1 TBSP Fresh Parsley

  • 1 Avocado

  • 1 tsp Paprika

  • Salt and Pepper To Taste

How To:

  1. Preheat the oven to 375 degrees.

  2. Chop all veggies.

  3. Add the potatoes on a baking tray with avocado oil, salt, and pepper. Toss to coat and bake for 40 minutes, stirring/tossing half way through.

  4. Add avocado oil to a frying pan and the onion, red pepper, and bacon over low heat for 5 minutes.

  5. Add the cooked potatoes, garlic, paprika, salt, and pepper and stir to combine.

  6. Once everything is fully cooked, remove from heat and transfer to bowls.

  7. Then, cook the eggs as desired- fry or scramble the eggs on the frying pan and then add on top of the hash.

  8. Top the hash with the eggs, avocado, and fresh parsley. Enjoy!

  • Fall Hash: Sweet Potato, Plantain, Brussels Sprouts, Bacon, Onion, Garlic, Eggs
