Avocado Pudding

Ingredients:

  • 1 Avocado

  • 1 Cup Plant Milk (Coconut Milk)

  • 1 TBSP Manuka Honey

  • Optional: Cinnamon and Maca

How To:

  1. Cut open avocado and remove the pit. Scoop into a blender and add the coconut milk and honey. Blend well. Either add the spices to the blender or transfer to a cup and top with spices. Enjoy!

Variations:

  • Pumpkin Pie: Avocado pudding with pumpkin pie spice: add pumpkin pie spice or a mixture of ¾ tsp cinnamon, and ¼ of each of the following: ginger, nutmeg, allspice, and clove

  • Superfood: Avocado pudding with chia seeds and flax seeds

  • Granola: Avocado pudding with paleo granola

  • Golden Milk:  Avocado pudding with a mixture of ¾ tsp turmeric, ¼ tsp each of  cinnamon and ginger, and a pinch of black pepper

  • Chocolate: Avocado pudding with 1-2 TBSP cacao powder

Notes:

  • Make this whole 30 friendly by omitting sweeteners.
