Quinoa Breakfast Bowl

Ingredients:
1 Cup Quinoa
1 TBSP Avocado oil
1 TBSP Tomato Paste
1 tsp Chili Sauce
Veggies: ½ Onion, ½ Cup Chopped Bell Pepper, ½ Cup Kale
Spices: Salt, Pepper, Garlic Powder, Onion Powder, Chili Powder
How To:
Cook Quinoa: Add 1 cup of rinsed quinoa and 2 cups of water to a pot and bring to a boil. Lower to a simmer and leave cover over for 12 minutes. Then, remove from heat and allow to cool with no cover.
Chop the veggies.
Once the quinoa is cooked, heat a pan over low to medium heat with avocado oil.
Add tomato paste, chili sauce, veggies, and spices to the pan. Saute for about 8 minutes, until onions are translucent.
Add preferred amount of quinoa and toss with a spatula for an additional 5 minutes. Set additional quinoa aside for leftovers.
Remove from the pan, transfer to a bowl, and enjoy!

Notes:
Make Elimination Diet, Paleo, and Whole 30 friendly by swapping quinoa with cauliflower rice.
