Quinoa Breakfast Bowl

Prep Time: 10 minutes Cook Time: 30 minutes Total Time: ~40 minutes

Ingredients:

  • 1 Cup Quinoa

  • 1 TBSP Avocado oil

  • 1 TBSP Tomato Paste

  • 1 tsp Chili Sauce

  • Veggies: ½ Onion, ½ Cup Chopped Bell Pepper, ½ Cup Kale

  • Spices: Salt, Pepper, Garlic Powder, Onion Powder, Chili Powder

How To:

  1. Cook Quinoa: Add 1 cup of rinsed quinoa and 2 cups of water to a pot and bring to a boil. Lower to a simmer and leave cover over for 12 minutes. Then, remove from heat and allow to cool with no cover.

  2. Chop the veggies.

  3. Once the quinoa is cooked, heat a pan over low to medium heat with avocado oil.

  4. Add tomato paste, chili sauce, veggies, and spices to the pan. Saute for about 8 minutes, until onions are translucent.

  5. Add preferred amount of quinoa and toss with a spatula for an additional 5 minutes. Set additional quinoa aside for leftovers.

  6. Remove from the pan, transfer to a bowl, and enjoy!

Variations:

  • Quinoa, Vegetable Broth, Onion, and Broccoli Seasoned With Nutritional Yeast, Salt, Pepper, Garlic Powder, and Onion Powder

Notes:

  • Make Elimination Diet, Paleo, and Whole 30 friendly by swapping quinoa with cauliflower rice.
