Poke Bowl

Ingredients:

  • 1 lb Ahi Tuna

  • 1 Cup Brown Rice

  • 1 Cucumber

  • 1 Cup Shredded Carrot

  • 1 Cup Shelled Edamame

  • 1 Avocado

  • ¼ Cup Green Onion

  • 1 TBSP Black Sesame Seeds

  • Sauce:

    • 4 TBSP Coconut Aminos

    • 2 TBSP Toasted Sesame Oil

    • 2 TBSP Rice Vinegar

    • 2 tsp Honey

    • 2 tsp Sriracha Sauce

    • 2 tsp Ginger Powder

How To:

  1. Add all sauce ingredients to a jar and shake well

  2. Cut Ahi Tuna into cubes and add to a bowl with ¾ of the sauce. Toss to coat and allow to sit in the refrigerator.

  3. Cook Rice: Brown Rice, White Rice, Cauliflower Rice

  4. Chop up all vegetables

  5. Add rice to a bowl, add veggies, sprinkle black sesame seeds, and add ahi tuna and drizzle with the remaining sauce. Stir to combine and enjoy!

Notes:

  • Make grain free by using cauliflower rice instead of brown rice.

  • Make vegan and vegetarian by using tofu instead of Ahi Tuna.
