Plantain, Avocado, And Eggs

Ingredients:

  • 1 Soft, Yellow Plantain

  • 1 Egg

  • 1 Avocado

  • 3 Pinches Cilantro

  • ¼ Small Jalapeno Pepper

  • 1 tsp Lime Juice

  • 1 TBSP High Heat Oil (Coconut Oil or Avocado Oil)

  • Sea Salt

How To:

  1. Place a pan over low to medium heat with a high heat oil (avocado oil or coconut oil.)

  2. Cut off the top of a plantain and peel the outer layer/skin off. Slice into rounds.

  3. Add the plantain rounds onto the pan and allow to sizzle in the oil until golden on the bottom, then flip and allow to sizzle until golden on the other side (about 5-10 mins each side.)

  4. Remove from the pan and transfer to a plate.

  5. Cut an avocado in half and scoop the avocado over the plantains and pour over the lime juice, then mash it to distribute. Sprinkle the salt.

  6. Take 3 pinches of cilantro, tear it up, and distribute it over the avocado.

  7. Slice the jalapeno into tiny pieces and sprinkle over the avocado..

  8. Crack the egg onto the same oiled pan over low-medium heat and allow it to fry. When the egg is firm, flip it and allow it to cook for 10 more seconds, then transfer over the avocado.

  9. Enjoy!

Variations:

  • Enjoy with the egg on the side or omit the egg altogether to make it vegan!
