Pine Nut Kale Salad

Ingredients:
1 Bunch Kale
⅓ Cup Raisins or Currants
1 TBSP Lemon Juice
1 TBSP Olive Oil
1 tsp Honey
½ Cup Toasted Pine Nuts or Sunflower Seeds
Salt and Pepper To Taste
2 TBSP of Nutritional Yeast
How To:
Rinse, chop, and massage the kale by squeezing and releasing it with clean hands. (You can also chop in the food processor!)
Mix dressing ingredients in a bowl (lemon juice, olive oil, honey, salt, and pepper.)
Add the kale, currants, and pine nuts to a bowl with dressing. Mix together.
Sprinkle the nutritional yeast on top and enjoy!
Notes:
Serve by itself or combine it with the Simple Quinoa Salad! This will keep in the refrigerator for up to 4 days!
