Pine Nut Kale Salad

Ingredients:

  • 1 Bunch Kale

  • ⅓ Cup Raisins or Currants

  • 1 TBSP Lemon Juice

  • 1 TBSP Olive Oil

  • 1 tsp Honey

  • ½ Cup Toasted Pine Nuts or Sunflower Seeds

  • Salt and Pepper To Taste

  • 2 TBSP of Nutritional Yeast

How To:

  1. Rinse, chop, and massage the kale by squeezing and releasing it with clean hands. (You can also chop in the food processor!)

  2. Mix dressing ingredients in a bowl (lemon juice, olive oil, honey, salt, and pepper.)

  3. Add the kale, currants, and pine nuts to a bowl with dressing. Mix together.

  4. Sprinkle the nutritional yeast on top and enjoy!

Notes:

  • Serve by itself or combine it with the Simple Quinoa Salad! This will keep in the refrigerator for up to 4 days!
