Pasta With Tomato Sauce And Veggies

Ingredients:
Gluten Free Rice Pasta
Or Pasta Of Choice: Regular Pasta, Whole Wheat Pasta, Chickpea Pasta, Lentil Pasta, Cassava Pasta, Almond Flour Pasta, Cauliflower Gnocchi, Vegetable Noodles (Zucchini Noodles, Carrot Noodles, etc.)
Marinara Tomato Sauce
Or Sauce of Choice: Garlic and Herb Tomato Sauce, Basil Tomato Sauce, Butternut Squash Sauce, etc.
Onion, Garlic, Zucchini, Spinach
Or Veggies of Choice: Broccoli, Tomato, Kale, Arugula, Peppers, Squash, etc.
How To:
Boil a pot of water and cook the pasta according to the directions on the packaging.
Cut up the veggies.
Saute the veggies by adding them with avocado oil on a frying pan over low to medium heat and stirring with a spatula until they are cooked through.
OR steam the veggies by adding them to a frying pan with a bit of water and covering with a lid, stirring occasionally until cooked through.
In a separate pot, pour the sauce. When the pasta and veggies are ready, heat the sauce over low heat for 3-6 minutes until hot. Be sure not to burn it.
Transfer the pasta to a bowl, scoop sauce and veggies into the bowl and stir together.
Enjoy it on its own or serve it with meatballs or chicken!
Variations:
Make Grain Free by swapping pasta with chickpea pasta or vegetable noodles.
Make Paleo, Elimination Diet, and Whole 30 friendly by using vegetable noodles (like zucchini noodles), grain free cauliflower gnocchi, or almond flour pasta.
