Pasta With Bolognese

Recipe From Organic Olivia: Nick’s Quick and Spicy Latin Bolognese

Ingredients:

  • ¼ Cup Olive Oil

  • 2 TBSP Coconut Sugar

  • ½ TBSP White Wine Vinegar

  • 3 Jars Tomato Paste (~7 oz)

  • 24 oz Broth (Chicken or Vegetable)

  • Sauce Seasoning:

    • ½ tsp Black Pepper

    • ½ tsp Red Pepper Flakes

    • 1 tsp Chili Powder

    • 1 tsp Dried Basil

    • 2 tsp Dried Oregano

    • 2 tsp Garlic Powder

    • 1-2 tsp Salt

  • 2 Medium Poblano Peppers (Can swap with Anaheim or Jalapeno if needed)

  • 2 Medium Onions

  • 1 Head Garlic

  • 2 lbs Ground Beef

  • Beef Seasoning:

How To:

  1. Add 1 tsp of olive oil to a pot over low heat and add dry sauce seasonings. Stir and cook for 3-5 minutes without burning. Turn off the heat and set aside.

  2. Chop garlic into large chunks. Dice the onion. Deseed and chop peppers into thick rings (make them easy to remove from the sauce later)

  3. Add 2 tsp of olive oil to a large pan over medium heat and add the garlic, onion, and poblano peppers. Saute for 15 minutes until wilted.

  4. Once wilted, turn the heat up to high and stir constantly to ensure no burning. Once the bottom of the pan starts to carmelize, remove from heat and transfer veggies into the pot.

  5. In the carmelized pan, add a splash of broth and heat over medium heat, stirring/scraping with a wooden spoon to get the flavor.

  6. Add tomato paste, broth, brown sugar, and white wine vinegar to the pot and allow to simmer on low-medium heat while cooking the ground beef.

  7. Add ground beef, salt, and coconut sugar to the pan and cook until brown.

  8. Add the meat to the sauce pot, mix, and allow the flavors to cook together for 30 minutes over low heat.

  9. When the sauce is almost done, boil water and cook pasta according to the packaging.

  10. When the sauce is done, pick out the peppers and enjoy the sauce over the pasta!

Variations:

  • Add spinach or kale to the sauce in the last 5-10 minutes for more vegetables!
